Lady Finger Banana Overnight Bowl
- 11/2 cup rolled oats
- 1 tbsp coca powder
- 1/2 tsp cinnamon
- 1/2 cup Greek yogurt (dairy or coconut)
- 1 tsp vanilla extract
- 2 tbsp maple syrup
- 11/2 cup milk (dairy or nut milk)
- 3 Lady finger banana’s
- Extra Greek yogurt, ( dairy or coconut)
- 1 tbsp toasted coconut
- 1 tbsp chocolate hazelnut butter
- Handful of blueberries
- 1 tbsp cocoa nibs
The night before, combine the dry ingredients together (rolled oats, coca powder, cinnamon) in a container with a lid. Follow by adding the yogurt, maple syrup, vanilla extract and milk of your choice. Stir well to combine, cover with the lid on and place in the fridge over night.
Divide the overnight oats between 2 bowls. Slice 2 Lady finger bananas lengthways in half and place on top. Add a good dollop of Greek yogurt, followed by the extra banana sliced up. Sprinkle the blueberries, toasted coconut and cocoa nibs over and finish off with a good drizzle of chocolate hazelnut butter.
