BBQ Banana Brulee

Ingredients


  • 4 firm bananas
  • 1 cup white sugar
  • Vanilla ice cream, to serve

Method


Cut the bananas in half lengthways, leaving the skin on. Spread the sugar onto a tray. Dip the cut side of the bananas into the sugar.

Preheat barbecue plate on high heat until hot. Place a sheet of baking paper onto the hot barbecue, then place the bananas, sugar side down onto the paper. Cook 2 serves at a time for 1-2 minutes until sugar starts to melt. Using tongs, carefully remove the bananas and press cut side down into the sugar again to recoat.

Barbecue on the same paper further 2-3 minutes until golden. Remove to a tray, toffee side up. Repeat with remaining bananas, replacing the baking paper. Stand 5 minutes to cool before serving with vanilla ice cream.

Tip: You can use a large non-stick frying pan instead of barbecue, but you will need to cook 1-2 serves at a time depending on the size of your pan. Don’t overcrowd the pan or the bananas will stew. Cut a few rounds of baking paper to fit over the base of the frying pan before you start. Replace the paper as needed.
