Banoffee Pie

Ingredients


  • 300g Digestive Biscuits
  • 150g Unsalted Butter, Melted
  • 1 x Caramel Top N Fill Can
  • 2 x Large Australian Bananas (approx 250g)
  • 300g Thickened Cream
  • 35g Icing Sugar
  • 1 x Mini Flake

Method


In a food processor or blender, blitz biscuits until a fine crumb has formed. Add melted butter and blitz again until combined. Transfer to a loose base pie tin and press into the base and sides. Place in the fridge whilst you make your cream. In a bowl combine cream and icing sugar and using an electric mixer beat until firm peaks form. Remove base from fridge and top with caramel. Slice bananas into thin slices and place on top of caramel until covered. Place cream on top of the banana layer and smooth to cover. Garnish with flake and refrigerate.
