Banana Topped Rice Cakes
Got the mid-morning munchies? Forget the nasties and try this simply delicious snack.
Ingredients
- 4 rice cakes
- 4 tbs peanut butter
- 2 bananas, peeled, thickly sliced
- Baby rocket leaves
Method
Spread 1 tablespoon peanut butter over each rice cracker. Top with banana and dressed rocket leaves.
Variations
Replace the peanut butter with hummus. Top with sliced banana, soft boiled egg and sprinkle with smoked paprika.
Replace the peanut butter with smashed avocado. Top with banana and chilli flakes.
Replace the peanut butter with fig paste. Top with cheddar cheese, banana, baby spinach leaves.
Replace the peanut butter with cottage cheese or spreadable ricotta. Top with shaved ham, banana, sprinkle with chopped chives.
