Air Fried Banana Spring Rolls
Everyone loves spring rolls – especially with a banana twist!
Ingredients
- ½ cup caster sugar
- 1 tbs ground cinnamon
- 8 frozen spring roll wrappers, partially thawed
- 4 firm ripe bananas
- 1 tbs water
- olive oil cooking spray
Method
Combine sugar and cinnamon in a bowl. Place 1 spring roll wrapper onto a board, with one corner pointing towards you. Cover remaining sheets with a clean, damp tea towel.
Peel and trim ends off 1 banana, then cut in half crossways. Place 1 piece of banana across the corner of the wrapper closest to you. Sprinkle with a heaped teaspoon cinnamon sugar. Brush edges lightly with water. Roll up, folding in the sides to enclose the banana. Place on a tray. Cover with a clean tea towel. Repeat to make the remaining spring rolls.
Preheat the Air fryer to 200°C. Spray the spring rolls with oil. Place 4 rolls into the Air fryer basket. Cook for 8-10 minutes or until pastry is golden. Remove to a plate. Repeat with remaining spring rolls. Sprinkle with remaining cinnamon sugar. Serve warm rolls with ice-cream if desired.
Tip: Even without an air fryer, you can still make these by baking on a greased wire rack in 220°C oven for about 12-15 minutes.
