Banana Celery Salad

A healthy low saturated fat salad to have as an accompaniment to any main meal. Packed with fibre and B group vitamins.

  • 5 bananas, thinly sliced
  • 3 sticks celery, thinly sliced
  • 1 large green capsicum, thinly sliced
  • 1/2 Spanish onion, thinly sliced
  • 150g shelled pistachios, roughly chopped
  • 1 tbsp lemon juice
  • 1/4 cup light mayonnaise


Combine the lemon juice and mayonnaise and set the dressing aside.

In a large mixing bowl combine sliced banana, celery, capsicum and Spanish onion.

Spoon dressing over salad, sprinkle with chopped pistachios and season with salt and pepper.


For a lower fat recipe nuts are optional.
