- 1 cup butter, melted
- 2 cups of brown sugar
- 2 large eggs
- 2 teaspoons vanilla
- ½ teaspoon of salt
- 2 cups self raising flour
- 2 mashed bananas
- ¼ cup butter
- ½ cup of brown sugar
- 2 tablespoons milk
- 1 cup icing sugar
Preheat oven to 175C.
Line a square or rectangle-sized baking tray with baking paper. Alternatively give it a generous rub of butter or a nice coating of cooking spray.
In a bowl combine melted butter and sugar. When combined, add in eggs and vanilla. Next, combine salt, flour and banana until it’s looking smooth.
Spread evenly across prepared pan.
Bake for 25-30 minutes until the centre is set
Once the centre is set, remove and place on bench to cool down.
Now, it’s time for the icing.
In a medium saucepan melt butter and add in sugar and milk. Stir until mixture comes to a boil, remove from heat and cool for 5 minutes.
Once cool, slowly mix in icing sugar with a whisk.
Spread mixture on top of blondies.
Allow the icing to set before cutting into squares and tucking in.
